1 ½ cups all-purpose flour
1 cup granulated sugar
1 ½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup plain Greek yogurt
½ cup vegetable oil (or melted coconut oil)
3 large eggs
1 teaspoon vanilla extract
1 tablespoon lemon juice (optional)
1 cup fresh berries (optional)
Powdered sugar for dusting (optional)
Instructions
Preheat your oven to 350°F (175°C). Prepare an 8-inch round cake pan by lining the bottom with parchment paper and lightly greasing the sides.
In a large mixing bowl, combine the dry ingredients: flour, sugar, baking powder, baking soda, and salt. Whisk them together until well-mixed.
Add the wet ingredients to the dry mixture: Greek yogurt, vegetable oil, eggs, vanilla extract, and lemon juice (if using). Stir until just combined.
Fold in the berries gently, distributing them evenly throughout the batter.
Pour the batter into the prepared cake pan, smoothing out the top with a spatula.
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
