2 cups fresh broccoli florets, finely chopped
1 cup shredded cheddar cheese
1/2 cup cream cheese, softened
1/2 cup breadcrumbs (gluten-free if needed)
1/4 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1 large egg
1 tablespoon olive oil
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a steamer basket, steam the chopped broccoli for about 3-4 minutes until tender but still vibrant green. Drain and let it cool slightly.
In a large mixing bowl, combine the softened cream cheese and shredded cheddar cheese. Mix well until fully incorporated.
Add the steamed broccoli, breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, pepper, olive oil, and egg to the cheese mixture. Stir until everything is well combined.
Using your hands, scoop out small portions of the mixture (about 1-2 tablespoons each) and roll them into balls. Place them on the prepared baking sheet.
Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy on the outside.
Once done, remove from the oven and let cool for a few minutes. Serve warm as an appetizer or snack.
