2 cups fresh basil leaves, tightly packed
1 cup olive oil (extra virgin recommended)
2 garlic cloves (optional)
1/2 teaspoon salt (adjust to taste)
Instructions
Rinse the fresh basil leaves thoroughly under cold water to remove any dirt or insects. Pat them dry gently with a clean kitchen towel or paper towel.
For a brighter green color, bring a small pot of water to a boil. Add the basil leaves for 15-30 seconds, then quickly transfer them to an ice bath. Drain and squeeze out excess water gently.
In a blender or food processor, combine the basil leaves, olive oil, garlic (if using), and salt. Blend until smooth.
Place a fine mesh strainer or cheesecloth over a bowl or jar. Pour the blended mixture through the strainer to separate the oil from the basil pulp.
Transfer the strained basil oil into a clean, dry glass bottle or jar. Seal tightly and store in the refrigerator.
