2 tablespoons honey or maple syrup (adjust to taste)
1 teaspoon vanilla extract
Zest of 1 medium lemon
1 cup fresh blueberries (or frozen, thawed and drained)
1 tablespoon chia seeds (optional)
Fresh mint leaves (for garnish, optional)
Instructions
In a medium mixing bowl, combine the cottage cheese, honey (or maple syrup), and vanilla extract. Mix thoroughly until the ingredients are well incorporated and the mixture is creamy.
Gently fold in the lemon zest and fresh blueberries into the cottage cheese mixture, being careful not to crush the blueberries.
Cover the bowl with plastic wrap or transfer the mixture into a sealed container. Refrigerate for at least 30 minutes to allow the flavors to meld.
