  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, chopped onion, minced garlic, egg, Worcestershire sauce, salt, and pepper. Mix until well combined.
  3. Using your hands, shape the mixture into meatballs approximately 1 to 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.
  4. Bake in the preheated oven for 20-25 minutes or until the meatballs are cooked through and browned on the outside.
  5. While the meatballs are baking, prepare the bourbon BBQ sauce by combining BBQ sauce, bourbon, brown sugar, and apple cider vinegar in a saucepan over medium heat, stirring until heated through.
  6. Once the meatballs are cooked, add them to the saucepan with the bourbon BBQ sauce and gently toss to coat.
  7. Slice the hoagie rolls open and place them on a serving platter. Spoon a generous amount of meatballs into each roll.
  8. Top each sub with chopped bacon and shredded cheddar cheese. If desired, add dill pickles.
  9. Garnish with fresh parsley or chives if desired and serve immediately.
