3 oz cream cheese, softened
2 tbsp granulated sugar
1 tbsp all-purpose flour
1 tbsp milk
1/4 tsp vanilla extract
1/4 tsp lemon juice (optional)
2 tbsp graham cracker crumbs
1 tbsp melted butter
1 tbsp brown sugar
Fresh berries (strawberries, blueberries, or raspberries) (optional)
Chocolate shavings or chips (optional)
Whipped cream (optional)
Instructions
In a small mixing bowl, combine the softened cream cheese and granulated sugar. Use a fork or a hand mixer to beat until smooth and creamy.
Add in the all-purpose flour, milk, vanilla extract, and lemon juice (if using). Mix thoroughly until well combined.
In another bowl, prepare the crust by mixing the graham cracker crumbs, melted butter, and brown sugar. Stir until the mixture resembles wet sand.
In a microwave-safe mug, first layer the crust mixture at the bottom, pressing it down gently with the back of a spoon.
Next, pour the cheesecake batter over the crust in the mug, filling it about three-quarters full.
Microwave the mug on high for about 30 seconds. Check the cheesecake; it should be set around the edges but still slightly jiggly in the center.
Once done, carefully remove the mug from the microwave and allow it to cool for a few minutes.
Top with your choice of fresh berries, chocolate shavings, or a dollop of whipped cream.
