A creamy cheese dip that combines the boldness of Rotel tomatoes, the rich depth of ranch seasoning, and the velvety texture of melted cheese, perfect for gatherings or cozy evenings.

1 (10 oz) can of Rotel tomatoes (diced, with juice)
1 (8 oz) package of cream cheese (softened)
1 cup of shredded cheddar cheese
1 cup of shredded Monterey Jack cheese
1 (1 oz) packet of ranch seasoning mix
1 cup of milk (whole or 2%)
Optional toppings: diced jalapeños, chopped fresh cilantro, chopped green onions, additional cheese for garnish
Instructions
In a medium-sized saucepan over medium heat, combine the softened cream cheese and milk. Stir frequently until the cream cheese is fully melted and the mixture is smooth, about 3-5 minutes.
Add the shredded cheddar and Monterey Jack cheese to the melted mixture. Continue stirring until all the cheese is melted and the dip is creamy and well combined, approximately 5-7 minutes.
Stir in the Rotel tomatoes with their juice and the entire packet of ranch seasoning mix. Mix well and allow the dip to simmer for an additional 3-4 minutes.
Reduce heat to low and let the queso cook for another 5 minutes, stirring frequently.
Once heated through and bubbling, remove from heat. Taste and adjust seasoning if needed.
Transfer to a serving bowl and top with any optional toppings like diced jalapeños, chopped cilantro, or green onions.
