2 cups cooked rice (white or brown), preferably long-grain
2 cups cooked and shredded chicken
2 cups fresh or frozen broccoli florets
1 can (10.5 oz) cream of chicken soup
1 cup milk
1 cup shredded cheddar cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1 cup crushed buttery crackers (such as Ritz)
2 tablespoons melted butter
Instructions
Preheat your oven to 350°F (175°C).
Grease a 9x13-inch baking dish with cooking spray or butter.
In a large mixing bowl, combine the cooked rice, shredded chicken, broccoli florets, cream of chicken soup, milk, garlic powder, onion powder, and half of the shredded cheddar cheese. Stir until well combined.
Add salt and pepper to taste.
Pour the mixture into the prepared baking dish, spreading it out evenly.
Sprinkle the remaining cheddar cheese over the top.
In a small bowl, combine the crushed crackers with the melted butter until all crumbs are coated.
Evenly spread the buttery cracker mixture on top of the cheese layer.
Bake for 25-30 minutes, until the top is golden brown and crispy.
Remove from the oven and let it cool for about 5 minutes before serving.
