  2. Peel and cut the carrots into fry shapes, aiming for about 1/4-inch thickness. Place them in a large bowl.
  3. Drizzle the olive oil over the carrot fries and add garlic powder, smoked paprika, salt, and black pepper. Toss until evenly coated.
  4. Spread the carrot fries in a single layer on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes, flipping halfway through, until crispy and golden brown.
  6. While the fries are baking, combine crumbled feta cheese, Greek yogurt, lemon juice, olive oil, and minced garlic in a bowl until creamy.
  7. In a small bowl, mix together honey and red pepper flakes until well combined.
  8. Once the carrot fries are done, serve hot with the feta dip on the side and drizzle the spicy honey over the fries.
