Ingredients

- 4 large carrots, peeled and cut into fries
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup feta cheese, crumbled
- 1/2 cup Greek yogurt
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1 clove garlic, minced
- Fresh herbs (like dill or parsley) for garnish
- 1/4 cup honey
- 1 teaspoon red pepper flakes
Instructions
- Preheat your oven to 425°F (220°C).
- Peel and cut the carrots into fry shapes, aiming for about 1/4-inch thickness. Place them in a large bowl.
- Drizzle the olive oil over the carrot fries and add garlic powder, smoked paprika, salt, and black pepper. Toss until evenly coated.
- Spread the carrot fries in a single layer on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, flipping halfway through, until crispy and golden brown.
- While the fries are baking, combine crumbled feta cheese, Greek yogurt, lemon juice, olive oil, and minced garlic in a bowl until creamy.
- In a small bowl, mix together honey and red pepper flakes until well combined.
- Once the carrot fries are done, serve hot with the feta dip on the side and drizzle the spicy honey over the fries.
