Instructions

  1. In a skillet over medium heat, cook the breakfast sausage until browned and crumbly, breaking it up with a spatula as it cooks. This should take about 5-7 minutes. Ensure that the sausage is fully cooked with no pink remaining. Drain excess fat and set aside.
  2. In a large bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder until fully combined.
  3. In the crockpot, begin layering the ingredients. Start with half of the frozen tater tots, spreading them evenly at the bottom. Follow with half of the cooked sausage, making sure to distribute it evenly. Pour half of the egg mixture over the top.
  4. Repeat the layering process with the remaining tater tots, sausage, and egg mixture.
  5. Sprinkle the shredded cheese evenly over the top of the final layer.
  6. Cover the crockpot and set it to cook on low for 6-8 hours, or on high for 3-4 hours.
  7. Once cooked, turn off the crockpot and let it cool for a few minutes. Garnish with chopped green onions if desired before serving.
