Dot Cake Bites are delightful, bite-sized desserts that combine the rich flavors of cake with a playful twist. These mini treats are perfect for any occasion, from casual gatherings to festive celebrations.
Ingredients
Scale:
1 cup all-purpose flour
1/2 cup granulated sugar
1/4 cup cocoa powder (for chocolate dot cake bites)
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
1/4 cup milk (or use a dairy-free alternative)
1/2 cup chocolate chips (for chocolate dot cake bites)
1/4 cup sprinkles
1 cup frosting (for decorating)
Instructions
Preheat your oven to 350°F (175°C) and grease a mini muffin tin or line it with mini cupcake liners.
In a large mixing bowl, whisk together the dry ingredients: flour, sugar, cocoa powder (if making chocolate dot cake bites), baking powder, and salt until well combined.
In a separate bowl, mix the melted butter, eggs, vanilla extract, and milk until the mixture is smooth.
Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined.
If you're making chocolate dot cake bites, fold in the chocolate chips until evenly distributed.
Using a small scoop or spoon, fill each muffin cup about two-thirds full with the batter.
Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
Let the mini cake bites cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
If desired, once cooled, decorate the bites with frosting and add sprinkles or additional toppings.
