2-3 tablespoons honey or maple syrup (adjust based on yogurt sweetness)
1 teaspoon vanilla extract
1 ½ cups rolled oats
½ cup nuts (like almonds or walnuts), chopped
½ cup shredded coconut (optional)
¼ cup nut butter (like almond or peanut butter)
¼ cup honey or maple syrup
Pinch of salt
Fresh fruits (berries, sliced bananas, or mango)
Chia seeds or flax seeds (optional)
Dark chocolate chips (optional)
Instructions
In a large mixing bowl, combine the rolled oats, chopped nuts, shredded coconut (if using), nut butter, honey (or maple syrup), and a pinch of salt. Stir until all ingredients are well combined and the mixture is sticky.
Line a muffin tin with cupcake liners. Press the granola mixture into the bottom and up the sides of each liner to form a cup shape.
Place the muffin tin in the freezer for about 15-20 minutes, or until the granola cups are firm.
While the granola cups are freezing, mix the Greek yogurt, honey (or maple syrup), and vanilla extract in a bowl until smooth and creamy.
