4 cups fresh strawberries, hulled and halved
1 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/4 teaspoon salt
2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, cold and cubed
3/4 cup buttermilk
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the hulled strawberries, 1 cup sugar, cornstarch, lemon juice, vanilla extract, and 1/4 teaspoon salt. Let this mixture sit for about 10 minutes.
In another mixing bowl, whisk together the flour, 1/4 cup sugar, baking powder, and 1/2 teaspoon salt. Cut in the cold butter until the mixture resembles coarse crumbs.
Pour in the buttermilk and stir gently until just combined.
Pour the strawberry filling into a greased 9x13 inch baking dish and drop spoonfuls of the biscuit batter over the strawberries.
Bake for 35-40 minutes or until the biscuit topping is golden brown and the filling is bubbly.
Let the cobbler cool for about 10 minutes before serving.
