1 pound ground beef, preferably 80/20
1 packet taco seasoning (about 1 ounce)
1 head of romaine lettuce, chopped
1 cup cherry tomatoes, halved
1 cup corn (canned or frozen), drained
1 cup shredded cheddar cheese
1 can (15 ounces) black beans, drained and rinsed
1 cup Fritos corn chips
For the Dressing:
½ cup sour cream
½ cup mayonnaise
2 tablespoons taco sauce
1 tablespoon lime juice
1 teaspoon cumin
Salt and pepper to taste
Instructions
In a skillet over medium heat, add the ground beef. Cook, breaking it up until browned and cooked through, about 7-10 minutes.
Drain excess fat, then stir in the taco seasoning according to package instructions. Let it simmer for about 5 minutes.
Combine sour cream, mayonnaise, taco sauce, lime juice, cumin, salt, and pepper in a bowl. Whisk until smooth and set aside.
In a large mixing bowl, combine the chopped lettuce, cherry tomatoes, corn, black beans, and shredded cheese. Toss gently to mix.
Add the cooked ground beef to the salad mixture and drizzle with the homemade taco dressing. Toss to combine thoroughly.
Just before serving, gently fold in the Fritos corn chips to maintain their crunchiness.
