Instructions
In a medium bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and black pepper until well combined. Whisk vigorously to emulsify the oil and lemon juice.
Place the chicken breasts in a large zip-top bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Massage the marinade into the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours.
Preheat your oven to 400°F (200°C) or medium-high heat if grilling.
For Baking: Place the marinated chicken on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until the chicken is cooked through (internal temperature should reach 165°F).
For Grilling: Remove the chicken from the marinade, allowing excess to drip off. Grill for about 6-7 minutes per side, or until cooked through.
In the last 5 minutes of cooking, sprinkle crumbled feta cheese on top of the chicken (if baking) to melt slightly.
