Hamburger soup is a comforting, hearty meal that perfectly combines flavors and ingredients, making it a favorite for families. This easy weeknight meal is not only satisfying but also brings together ground beef, vegetables, and broth in a delightful way.

1 lb ground beef
1 medium onion, chopped
2 cloves garlic, minced
3 large carrots, diced
2 ribs celery, diced
1 can (14.5 oz) diced tomatoes, undrained
4 cups beef broth
2 cups frozen mixed vegetables
1 teaspoon dried Italian seasoning
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons Worcestershire sauce
Toppings (optional): shredded cheese, chopped fresh parsley or cilantro, sour cream or plain Greek yogurt
Instructions
In a large pot or Dutch oven, heat over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon until browned, about 5-7 minutes. Drain excess fat if necessary.
Add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent and fragrant, about 3-4 minutes.
Stir in the diced carrots and celery. Cook for an additional 5 minutes until they begin to soften.
Pour in the beef broth and add the diced tomatoes (with juices), mixed vegetables, Italian seasoning, Worcestershire sauce, salt, and pepper. Stir to combine.
Bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer uncovered for 20-25 minutes.
Taste the soup and adjust salt and pepper as needed.
Ladle the soup into bowls and top with shredded cheese, fresh herbs, and a dollop of sour cream if desired.
