2 teaspoons baking powder
1 teaspoon salt
1 cup cottage cheese (preferably low-fat)
2 large eggs
1 tablespoon olive oil
1 cup fresh spinach, chopped (or ½ cup frozen, thawed and drained)
½ cup shredded cheese (optional)
1 tablespoon chopped fresh herbs (optional)
Sesame seeds or everything bagel seasoning (optional)
Instructions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, and salt until well combined.
In another bowl, mix the cottage cheese, eggs, and olive oil until smooth and creamy.
Pour the wet ingredients into the dry mixture and stir until just combined.
Gently fold in the chopped spinach, shredded cheese, and herbs if using.
Divide the dough into eight equal portions. Roll each portion into a ball and then shape it into a bagel.
If desired, brush the tops of the flagels with a little olive oil and sprinkle with sesame seeds or everything bagel seasoning.
Bake in the preheated oven for 20-25 minutes or until the flagels are golden brown.
