This recipe combines the comforting flavors of melted cheese, tender chicken, and zesty green chiles in a single skillet, making it an ideal choice for easy weeknight dinners.
Ingredients
Scale:
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon cumin
1 tablespoon olive oil
1 can (10 ounces) diced green chiles
1 cup sour cream
1 cup chicken broth
1 teaspoon lime juice
1 teaspoon paprika
1/2 teaspoon onion powder
2 cups shredded cheese (cheddar or Monterey Jack)
Fresh cilantro, chopped (for garnish)
Sliced jalapeños (optional)
Instructions
In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with salt, pepper, garlic powder, and cumin. Add the chicken to the skillet and sauté for about 5-7 minutes or until golden brown and cooked through.
In a mixing bowl, combine the diced green chiles, sour cream, chicken broth, lime juice, paprika, and onion powder. Stir until well blended.
Pour the sauce mixture over the cooked chicken in the skillet. Stir to coat evenly and let it simmer for about 5 minutes.
Sprinkle the shredded cheese evenly over the chicken and sauce mixture. Cover the skillet and let it cook for an additional 3-5 minutes, or until the cheese is melted and bubbly.
Remove from heat, garnish with fresh cilantro and sliced jalapeños if desired. Serve hot.
