½ cup powdered sugar, sifted
1 teaspoon pure vanilla extract
1 cup heavy whipping cream, cold
2 cups fresh peaches, peeled and diced
¼ cup granulated sugar
1 teaspoon cinnamon
1 tablespoon lemon juice, freshly squeezed
12 sugar cones
¼ cup graham cracker crumbs
Instructions
In a large bowl, beat the softened cream cheese using an electric mixer until smooth and creamy. Gradually add the sifted powdered sugar and vanilla extract, mixing until well combined.
In a separate, chilled bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
In a medium saucepan, combine the diced peaches, granulated sugar, cinnamon, and lemon juice. Cook over medium heat for about 5-7 minutes until the peaches soften and release their juices.
Take a sugar cone and fill it with the cheesecake filling using a piping bag or a spoon, leaving about half an inch of space at the top.
