Ingredients
Scale:
For the Cobbler Filling:
2 cups mixed berries (blueberries, strawberries, or raspberries)
1 cup jelly (your choice of flavor like grape or strawberry)
1 tablespoon sugar (optional)
1 tablespoon lemon juice
For the Peanut Butter Layer:
1 cup creamy peanut butter
1/2 cup powdered sugar
1/4 cup milk
1 teaspoon vanilla extract
For the Cobbler Crust:
1 cup all-purpose flour (or gluten-free flour)
1/2 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, melted
1/2 cup milk
Instructions
Preheat your oven to 350°F (175°C).
In a medium bowl, combine the mixed berries, jelly, sugar (if using), and lemon juice. Toss until the berries are coated and set aside for 10-15 minutes.
In another bowl, whisk together the peanut butter, powdered sugar, milk, and vanilla extract until smooth.
In a mixing bowl, whisk together the flour, sugar, baking powder, and salt. Add the melted butter and milk, mixing until just combined.
In a greased 9x9-inch baking dish, spread the cobbler crust mixture on the bottom. Pour the berry mixture over the crust, followed by dollops of the peanut butter mixture on top and swirl gently.
Bake for 30-35 minutes, or until the crust is golden brown.
Allow the cobbler to cool for at least 15 minutes before serving.
