2 cups shredded cheddar cheese
1 cup cream cheese, softened
1 (10-ounce) can Rotel diced tomatoes with green chilies
1 small onion, finely chopped
1 clove garlic, minced
1 pound ground beef or sausage (optional)
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
Tortilla chips (for serving)
Instructions
In a medium skillet over medium heat, brown the ground beef or sausage, breaking it into small pieces as it cooks. Cook for 5-7 minutes, or until fully cooked, with a nice brown color. Drain excess fat and set aside.
In a large saucepan, combine the cream cheese and shredded cheddar cheese over medium heat. Stir continuously until melted and smooth, about 3-5 minutes.
