8 corn tortillas, preferably thicker ones for better crunch
Vegetable oil for frying
Salt, to taste
6 dried red chiles (such as guajillo or ancho)
2 cups water
2 cloves garlic, minced
1 teaspoon ground cumin
Salt, to taste
4 large eggs, preferably organic or free-range
1 tablespoon olive oil
Fresh cilantro, chopped (for garnish)
1 avocado, sliced (optional)
Feta cheese or crumbled queso fresco (optional)
Instructions
In a large skillet, heat about 1/4 inch of vegetable oil over medium heat.
Once the oil is hot, carefully add one tortilla at a time, making sure not to overcrowd the pan.
Fry each tortilla for about 2-3 minutes on each side, or until golden brown and crispy.
Remove the toasted tortillas and drain on paper towels to absorb excess oil. Sprinkle with salt while still hot.
Remove the stems and seeds from the dried chiles.
In a small saucepan, combine the chiles and water. Bring to a boil over medium heat, then reduce to a simmer. Cook for about 15 minutes until the chiles are soft.
Drain the chiles, but reserve the liquid. In a blender, combine the chiles, garlic, cumin, and 1 cup of the reserved liquid. Blend until smooth.
Season with salt to taste and set aside.
In a non-stick skillet, heat the olive oil over medium heat.
Crack the eggs into the skillet and cook to your desired level of doneness.
Season the eggs with salt and pepper as they cook.
Place each crispy tostada on a plate.
Generously spoon the red chile sauce over each tostada.
Top with a cooked egg and any additional toppings you prefer.
