  1. Preheat your oven to 350°F (175°C).
  2. In a large oven-safe skillet or frying pan, heat a splash of olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, until it becomes translucent. Stir in the minced garlic and chopped spinach, and cook for another 2 minutes until the spinach wilts.
  3. Fold in the diced roasted red peppers into the sautéed mixture. Season with salt, pepper, oregano, and paprika. Sauté for an additional minute.
  4. In a mixing bowl, whisk together the eggs and milk until well combined. Season with a pinch of salt and pepper.
  5. Pour the egg mixture over the sautéed vegetables in the skillet. Use a spatula to gently stir the mixture. Sprinkle feta cheese on top.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is set in the center and lightly golden on top.
