Ingredients
Scale:
1 ½ cups all-purpose flour
½ cup granulated sugar
1 tablespoon baking powder
¼ teaspoon salt
½ teaspoon ground cinnamon (optional)
1 large egg
½ cup whole milk
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
½ cup unsalted butter, softened to room temperature
2 cups powdered sugar, sifted for a smoother texture
2-3 tablespoons heavy cream, adjust for desired consistency
1 teaspoon vanilla extract, for added flavor
¼ cup fresh strawberries, pureed (about 3-4 strawberries)
Instructions
Preheat your oven to 350°F (175°C). Grease a donut pan lightly with non-stick spray.
In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until well combined.
In a separate bowl, beat the egg and then whisk in the milk, melted butter, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients. Gently mix until just combined.
Spoon the batter into the prepared donut pan, filling each cavity about ¾ full.
Bake in the preheated oven for 10-12 minutes, or until the donuts spring back when lightly pressed.
Remove the pan from the oven and allow the donuts to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.
In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing on low. Add the vanilla extract, strawberry puree, and heavy cream, then beat on high until fluffy.
Once the donuts are completely cool, spread or pipe the strawberry buttercream frosting onto each donut generously.
These donuts are best enjoyed fresh, but they can be stored in an airtight container for up to 2 days at room temperature.
