Watermelon Popsicles

As the summer heat rolls in, there's no better way to cool down than with refreshing Watermelon Popsicles. These homemade frozen treats are not only delicious, but they’re also healthy, making them perfect for hot days.

  1. Start by cutting the watermelon into quarters and removing the rind. Slice the flesh into smaller chunks and place them into a blender.
  2. Add the watermelon cubes to the blender and blend until smooth, about 30-60 seconds.
  3. Pour in the freshly squeezed lime juice, and if desired, add honey or agave syrup. Blend again briefly to combine the ingredients evenly.
  4. Pour the watermelon mixture into popsicle molds, filling them about ¾ full.
  5. Place the popsicle sticks into the molds, ensuring they stand upright and centered in the mixture.
  6. Transfer the filled molds to the freezer and freeze for at least 4-6 hours, or until completely solid.
  7. To remove the popsicles, run warm water over the outside of the molds for a few seconds to loosen them.
  8. Enjoy immediately or store in an airtight container in the freezer for later.
