Ingredients
Scale:
1.5 lbs boneless skinless chicken thighs, diced
3 tablespoons butter, preferably unsalted
1 medium onion, finely chopped
4 cloves garlic, minced
1 tablespoon ginger, grated
1 tablespoon garam masala
1 teaspoon turmeric
1 teaspoon cumin
1 teaspoon paprika
1 can (14 oz) crushed tomatoes
1 cup heavy cream
Salt and pepper, to taste
Fresh cilantro, for garnish
8 oz bowtie pasta
2 tablespoons olive oil
Juice of 1 lemon
Zest of 1 lemon
1/2 cup grated Parmesan cheese
1 lb broccoli florets
2 tablespoons olive oil
1 teaspoon garlic powder
Instructions
In a large skillet, melt 3 tablespoons of butter over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
Add the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.
Sprinkle in the garam masala, turmeric, cumin, and paprika, stirring continuously for about 1 minute to toast the spices.
Add the diced chicken thighs, season with salt and pepper, and cook until browned on all sides, about 8-10 minutes.
Pour in the crushed tomatoes and stir well, bringing to a simmer. Reduce heat and allow to simmer for 10 minutes.
Stir in the heavy cream and cook for another 5-7 minutes until the sauce thickens.
Adjust seasoning with salt and pepper if necessary. Garnish with fresh cilantro before serving.
In a large pot, bring salted water to a boil. Add bowtie pasta and cook according to package instructions until al dente.
Drain pasta, return to pot, and add olive oil, lemon juice, and lemon zest. Toss to coat.
Stir in grated Parmesan cheese and season with salt and pepper to taste.
Preheat the oven to 425°F (220°C). Toss broccoli florets with olive oil, garlic powder, salt, and pepper.
Spread broccoli on a baking sheet and roast for 15-20 minutes until crispy and bright green.
Serve a generous portion of Zesty Butter Chicken alongside the lemony bowtie pasta and crisp broccoli.
