  1. In a medium bowl, whisk together the flour, baking powder, and salt until evenly combined.
  2. In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-5 minutes.
  3. Beat in the egg and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  5. Wrap the dough in plastic wrap and refrigerate for at least 1 hour or until firm.
  6. Preheat your oven to 350°F (175°C).
  7. On a floured surface, roll out the chilled dough to about 1/4-inch thickness and cut out cookies using cookie shapes.
  8. Place the cookies on a baking sheet lined with parchment paper and bake for 8-10 minutes, or until the edges are lightly golden.
  9. While the cookies cool, divide the vanilla frosting into three bowls. Leave one bowl white, then tint one bowl red and one bowl blue using gel food coloring.
  10. Once the cookies are completely cooled, use a spatula or piping bag to spread or pipe the frosting onto the cookies.
  11. While the frosting is still wet, sprinkle colorful sprinkles on top.
